Breakfast Burritos For Mamie
Mamie works as a waitress at a local mom and pop restaurant. She likes to eat a savory breakfast rather than a sweet one. I make her these and she heats them in the micro each morning. I make about 30 so she has plenty. Daddy sometimes sneaks a few!
I scramble a lot of eggs while baking muffins, so that more than one thing is being accomplished at once, a must in a large family home. I buy the bacon pieces instead of the slices, you get more for your money and plus I will break it up anyway. I have made these with sausage too. But since daddy doesn't work in a place with a micro anymore, I haven't in a while.

After I place all the fillings on the tortillas, I begin the rolling sides to middle (#1). Then I grab the bottom and roll up (#2). Once I am sure all the good stuff is inside, I start rolling the foil (#3 & 4), fold in the sides of the foil (#5).
